Montemor-o-Novo has unique characteristics for agriculture and a diversity of producers who treat the land with respect. At Poda, we work closely with many of these producers, who even optimise some of their production with our restaurant in mind. It's a privilege.
What makes Poda so unique is the hand of Chef João Narigueta, who, through his in-depth knowledge of Portuguese gastronomic evolution (research), manages to make centuries-old recipes shine through haute cuisine techniques.
